Vegan chocolate truffles

- 200 g dark chocolate (70%) chopped
- 100 g dark chocolate (55-60%) chopped
- 225 g avocado fles very ripe
- 50 g maple syrup
- pinch of salt
- cocoa powder to cover
In a mixer add the avocado flesh and blend until smooth.
Melt the chocolate in the microwave - be careful not to burn it - and let it cool at room temperature.
Once the chocolate is cooled add it to the avocado flesh and mix well with a spoon.
Refrigerate the mixture for 2 hours, mixing every 20-30 minutes.
After 2 hours you can start making your small truffles, by rolling the mixture into your hands and cover them with cocoa powder.
