Equipment

  • 1 bowl
  • 1 spoon
  • 1 baking tray
  • parchment paper
  • 1 cooking scale

Ingredients
  

  • 150 g plain flour
  • 50 g oats rolled
  • 50 g sugar
  • 2 Tbsp mixed seeds linen, sesame, sunflower or pumpkin
  • 50 g chocolate chips
  • 1 tsp baking powder
  • 60 ml coconut oil melted
  • 50 ml soy milk or other dairy-free drinks

Instructions
 

  • Preheat the oven to 180°C.
  • Mix all the dry ingredients: oats, flour, sugar, seeds and baking powder.
  • Add coconut oil and milk. Mix well until combined.
  • Add the chocolate chips and keep mixing.
  • Line a baking tray with parchment paper, spoon over the mixture and shape with your hands.
  • Bake for 15-20 minutes (check halfway through cooking).

Notes

You can substitute chocolate chips with fresh fruit such as raspberries or cherries.
For a gluten-free option, swap the flour for buckwheat flour and check that all the other ingredients you are going to use are gluten-free certified.
